Upma recipe | Rava upma

One of the most common Indian breakfast, Rava upma or suji upma is a savory dish made with sooji, spices, curry leaves, onion, chilies, ginger, water and most important is ghee. It’s a wholesome meal that goes well with coconut chutney.

What is Upma?

Uppuma, yes this is the correct name but we North Indians call it as Upma is a traditional South Indian breakfast made with Suji ( also called as rava or semolina).

It involves roasting of suji in ghee which is then tempered with mustard seeds, curry leaves, chana and urad dal, green chili, ginger, onion and coriander. Sugar is also added along with lemon to give a sweet & tangy taste.

This delicious hot breakfast can be made vegan using oil instead of ghee. It’s also best option for weight watchers. You can also include veggies as per your needs, where in you need to sauté them separately for sometime.

Ingredients

  • For Sautéing Rava
    • 1tsp ghee/oil
    • 1/2 cup/ 80 gms rava/ sooji
  • For Upma
    • 3 tsp oil/Ghee
    • 1 tsp mustard Seeds
    • 1 tsp urad dal
    • 1 tsp chana dal/ bengal gram
    • 4-5 no curry leaves
    • Small ginger chopped
    • 1 fresh green chili chopped
    • 1 medium onion, chopped
    • 2 cups water
    • Salt to taste
    • ¼ tsp sugar
    • 1 wedge of lemon
    • 1 tsp ghee

How to prepare

  • Heat ghee/oil in a pan. Add suji and sauté for 2-3 minutes on low flame. Stir continuously to make sure it doesn’t get burn. Remove from the flame and keep aside for later use.
  • For Upma, heat ghee/oil in a same pan and splutter mustard seeds, then add chana dal, urad dal. Sauté until they turn light brown.
  • Now add ginger & green chili and cook for a minute until ginger releases its raw smell.
  • Add curry leaves and onion and sauté until onion turn translucent.
  • Add in salt, water and allow it to boil. When it starts boiling allow it it to boil for 2 minutes. In this way all the flavors will infuse in water and eventually dal will become soft.
  • Now at this stage add in prepared suji / rava. Stir continuously while cooking to avoid any lumps.
  • Add sugar and cook it for a minute.
  • When almost all the water is absorbs reduce the flame. sprinkle lime juice, coriander leaves and ghee. Mix well.
  • Serve immediately.
