Sweet corn soup is a creamy and delicious soup that is perfect for cozy winter evenings and times when you are low on energy. Make this easy soup recipe when you crave for a comfort meal. With just few ingredients this corn soup gets ready under 20-25 minutes.
This sweet corn soup is made with roasted corn kernels, veggies, some spices and herbs. It’s creamy, spicy and full of flavors. Can be served as is or you can pair with cheese toast, noodle or pasta.
Corn soup is perfect as a starter or a light dinner option. You will need corn on the cob first either roast it on direct flame or steam it and then remove the corn kernels to make soup. The sweet corn should be ripe, juicy and have a vibrant yellow color once cooked. Also this recipe uses no corn flour so it’s healthy and can be eaten during your weight loss journey too.

Ingredients
- Corn on the cob/ 1 Sweet corn
- 1 tbsp butter
- 1 tbsp chooped garlic
- 2 tbsp chopped onion
- 2 tbsp chopped carrot
- 2 tbsp chopped French beans
- 2 tbsp roasted sweet corn kernels
- 1 tbsp oats flour
- 2.5 cup water
- 1 Red or green chili
- Salt as per taste
- 1/4 cup paneer cubes
- 1/2 tsp vinegar or lemon juice
- Few Spring onion greens
How to prepare Sweet Corn Soup?
- Peel the corn on the cob.
- Roast it on direct flame or if you are using frozen corn kernels then boil them.
- Remove the corn kernels from the cob using a sharp knife.
- In a blender jar add the corn kernels along with 1/2 cup water and blend to a smooth paste.
- To make soup, in a kadhai add butter, once it’s warm add chopped garlic and roast for 30-40 seconds.
- Then add in onion, carrot, French beans, corn kernels and sauté on high flame for 30-40 seconds.
- Add in oats flour and cook till it’s not raw any more.
- Once oats flour is cooked add the corn kernels paste along with water and red chilies.
- Cook it till it boils. Then add in water and let it cook for 5-6 minutes.
- Now add salt as per taste and let it cook for a minute more.
- Finally add paneer, vinegar and spring onion greens. Cook for 30 seconds more and your veg sweet corn soup is ready to serve.
