Quick, easy, delicious and nutritious vegetarian burrito bowl at home. A perfect meal with a combination of protein, carbs and fats is not only healthy and filling but it’s satisfying too. Easy homemade burrito bowl is a simplified vegetarian version of famous chipotle’s burrito bowl This bowl contains beans, flavored rice, spicy marinated paneer, veggies, thick curd, nachos and a twist with green chutney.
Ingredients
- For paneer
- Paneer – 100 gms
- Salt as per taste
- Kashmiri red chilli powder – 1/4 tsp
- Cumin powder – 1/4 tsp
- Red chilli flakes – a pinch
- Mixed herbs / Oregano – 1/8 tsp
- Black pepper powder – 1/8 tsp
- Lemon juice of half lemon
- Oil – 1 tsp ( To cook marinated paneer)
- For rice
- Boiled rice – 1 cup
- Salt – 1/4 tsp
- Black pepper powder – 1/8 tsp
- Kashmiri red chilli powder – 1/4 tsp
- Cumin powder – 1/4 tsp
- Oregano – 1/4 tsp
- Chilli flakes – 1/4 tsp
- Red chilli sauce – 1/4 tsp (optional)
- Chutney
- Dahi/Curd – 1/4 cup
- Coriander leaves – 1/4 cup
- Salt as per taste
- Lemon juice of half lemon
- To assemble
- Rice
- Paneer
- Lettuce
- Tomatoes
- Boiled sweetcorn
- Boiled kidney beans / Rajma
- Slices of onion and capsicum
- Jalapenos (optional)
- Curd (Thick)
- Chutney
- Nachos (optional)
How to prepare?
- Take a bowl add paneer and all the spices mentioned in ingredients section. Mix them well and keep aside for 15 minutes.
- To cook paneer add oil in pan. Once hot add marinated paneer pieces and cook on low flame for 5-6 minutes.
- In the same pan toss in the sliced onions and capsicum.
- Next mix in all the ingredients of rice and cook it for 4-5 mins on low flame. You can skip the cooking part and use the herbed rice as it is.
- To make the green chutney blend all ingredients to a smooth paste.
- All the cooking part is done it’s time to plate.
- Scoop in cooked rice in a bowl then top with paneer, veggies, beans, thick curd or sour cream to balance the flavors. Serve with green chutney. Voila!
